Baby Banana Oatmeal Muffins

I made muffins this morning. They turned out pretty good. I did forget the sugar, but they still tasted good to me. This is a great recipe to use if you have an abundance of baby oatmeal cereal and baby food that you get from WIC.

Baby Banana Oatmeal Muffins

1 1/3 Cups Flour
3/4 Cup Baby Oatmeal*
1/3 Cup Sugar
2 tsp Baking Powder
1/4 tsp salt
1 Beaten Egg*
1/2 Cup Milk*
2 - 4 oz jars baby food- bananas*
1/4 cup cooking oil
-------------------------
Mix dry ingredients and wet ingredients separately. Combine together, mixing just until wet. Bake at 400 degrees for 20 minutes. Makes 12.

    I used WW flour, banana strawberry baby food, applesauce instead of oil, and added a bit of cinnamon. They are so moist!!!

    1. I think that regular unsweetened applesauce is the same as baby applesauce.

  3. we put a fall spin on these today, substituting sweet potato baby food and adding cinnamon. soooo good! lol I might have to keep buying baby food after the baby is grown

  6. These muffins turned out nicely. I used two ripe bananas and ww flour. My baby and husband like them. The recipe made 12 nice sized muffins.

  7. I've tried a few baby cereal recipes and none have worked, until this one! The texture looked off to me when i mixed it up, but they came out great. I did mini muffins and baked for 5 mins less.

    I used 7.5oz squash babyfood, no salt, no sugar (but used apple juice in place of milk to add some sweetness). It tasted a bit satly (probably because there was less sugar to offset the baking powder), but my little one likes it. Great way to get more baby cereal in him for extra iron!

  8. The recipe worked as a banana bread loaf, too. I used 1/4 oz fruit puree and 2-3 tbsp butter instead of oil. 1.5 ripe mash banana instead of jar. Cooking time was more like 35 min. She loved it and so did my mother!

  10. Substituted apples for oil. So glad i found this recipe, B isn't eating baby food anymore and I still have a ton of baby food in the pantry.

  11. Wow!!! These are GREAT!! I have tried lots of different recipes with baby cereal and this one is by far the best. I used 2 ripe mashed bananas instead of the baby food jars. I was worried they were going to be dry given the texture before baking - but they are super fluffy and moist! They are perfect. Will be making this recipe again and again. Thank you so much for posting
